Known as the highest peak east of the Mississippi, Mount Mitchell is easily accessible. Most people drive to the top, conquering the mountain with their car, but there are also some nice trails that you can take to hike to the top.
Being the hiker that I am, I elected to hike to the top to say that I hiked to the summit, and glad that I chose that option. There is a great trail, called the Mount Mitchell Trail, that starts at the Black Mountain Campground and leads all the way up to the summit. The road to get to the campground is narrow and can take a while to drive on, but it is worth the drive. this is also a great campsite to stay at if you are looking for a place to camp.
The trail is about 5 miles one way and is not too strenuous. You get a few views along the way, but it is mostly all in the woods. It is dry for the most part, but if it has been particularly wet leading up to your hike, you may get your feet wet as part of the trail does pass over a small creek that does not have a bridge.
One at the top, you emerge out of the woods to find a plethora of people that drove to the top.
There is a nice 360 view from the top, which provides a great place to stop for lunch before heading back down the mountain. If you're lucky, you'll get to pet some dogs that are visiting with their owners that drove to the top (I saw at least 10 dogs).
Warning: It may be cloudy/foggy at the top and you may not get much of a view. Don't forget, it's called the 'Smoky Mountains' for a reason.

You drive up, but definitely not to the top! We hiked, including a visit to the museum on our way up.
